Heirve in Spanish means to boil so you’d expect to see hot water boiling over the side of the mountain but not so, instead, Hierve el Agua is a stunning natural rock formation where minerals resemble cascading waterfalls down the side of the cliff to the valley below….it’s absolutely amazing.
Before we stop for lunch at a Zapotecan family home, we’ll visit Tule Tree, a 1500 year old tree that’s over 11 meters wide. You need to see it to take in the magnificence of its size.
After a delicious lunch we have the chance to sample some of the famous, tequila-like local liquor, mezcal made from the agave plant…an acquired taste!
Later, learn about a tradition not many have the opportunity to witness when visiting Oaxaca – beeswax candle making. We’ll visit a local shop that keeps this tradition alive to learn about the technique involved in making these delicate candles, have a try if you wish.

Another culinary experience awaits us this evening at La Chaya Maya, one of the oldest places in town and popular with many of the locals. This city probably competes the most with Oaxaca for the best food in the country. Tonight, we will be the judge!
